CHOCOLATE CAKES WITH APPLE CREAM

Preparation time: 60 Min.
Ingredients for 4 people

INGREDIENTS

  • 150 g tofu
  • 50 g soy milk
  • 60 g extra virgin olive oil
  • 160 g dark chocolate 80%
  • 50 g brown sugar
  • 30 gr flour
  • 2 apples
  • Half a teaspoon of turmeric
  • Cinnamon powder to taste
  • Juice and peel of 1 lemon
  • 2 bay leaves

PREPARATION:

Put the tofu, soy milk, oil, brown sugar and flour in a blender; blend everything at high speed until the mixture is smooth and creamy.

In the meantime, cut the chocolate into chunks and put them in a bain-marie to melt. Let it cool on a table and pour it into the previous mixture, continuing to blend at low speed. Once blended, pour the chocolate mixture into single-portion molds and bake at 130° for 8-10 minutes.

Peel and cut the apples into pieces. Put the apple pieces, the lemon juice and peel, cinnamon, 2 bay leaves and turmeric in a saucepan; cook at a low temperate with a lid, until the apples are overcooked; remove the bay leaves and lemon peel.
Once the mixture has cooled, blend until a cream is obtained.
Use this cream to accompany the freshly baked hot pies.
